This barley miso is a recreation based on the recipe used by Saigo Takamori during the Meiji era. Miyakonojo, where we at Yamae are located, is the birthplace of the Shimazu family of Kagoshima and was originally part of the Satsuma domain. Saigo Takamori, a patriot born in Satsuma who loved heaven and humanity and was a key figure in the Meiji Restoration, was also said to be skilled at making miso in his private life.
The miso is created based on historical documents that describe the type of miso Saigo made at the time. It is said that the miso at that time contained 30 parts barley koji, which is a higher proportion of koji than modern miso, resulting in a miso with a barley aroma and a clean, sweet taste.
