Hatcho miso made with domestic soybeans. It is packed in an aluminum bag, so it
can be stored for a long time, and is recommended for everyday use as well as for stockpiling as an emergency food. It is made by storing soybeans and salt in a wooden barrel, and then a skilled craftsman stacks natural river stones into a cone shape to use as weights, and fermenting it naturally for two summers and two winters (more than two years). It is characterized by its rich umami flavor and a rich taste with a slight sourness and astringency. It can be used not only in miso dishes such as miso soup, but also to add richness to dishes
