This light-colored soy sauce is made with Izumo's famous water and has a rich natural climate. It can be used in a wide variety of dishes, such as soup, chawanmushi, stews that make the most of the color of the ingredients, rice dishes, and yosenabe. Although it is light in color, light soy sauce is slightly higher in salt than dark soy sauce.
