Put a 10 sq. inch Hime Dashi Kombu in a pot with 1 quart of water. Simmer over medium heat for 10 minutes or more. Pull out kombu when water starts to boil.
To enhance flavor, add Hana Katsuo (Dried Bonito Shavings) 5 minutes before taking the kombu out, Left over kombu broth may be refrigerated for later
Boiled kombu may be used as Nishime kombu.
