Potato Starch Dissolved in Water Ankake / Fatty Toro
When used as a seasoning, it is mixed with a liquid (other seasoning) before use, but if that is not available, it is dissolved in water before use. Dissolve in water from the same amount to about 3 times the amount of potato starch to be used and use it.
(Usually double the amount of water.)
* Wheat flour is often used in addition to potato starch as a coating material for deep-fried foods. Wheat flour tends to be moist and sticky, while potato starch tends to be crispy.
* Just before grilling or stir-frying pork, beef, or shrimp, lightly dust them with potato starch to lock in the “umami” of the ingredients, making them very delicious and softer to eat.
* Katakuriko left over from cooking should not be put back in the bag, but used as a substitute for detergent, such as cleaning sinks and pots. In addition, if you use it when rubbing and washing fish, shellfish, and shrimp before cooking, you can remove dirt and odors.
